Deconstructed Houmous Salad

Kitsunetsuki KItchen - Deconstructed Houmous Salad

Just a quick post to make note of the recipe for tonight’s dinner, a deconstructed houmous with some extra bits! I’ve been meaning to top up the tahini supply and wanted to whip up something quick with a lot of protein in, so this seemed like a good, simple summer meal.

For two people you’ll need:

1 can chickpeas (400g or 250g drained)
1/2 medium red onion
1/2 medium cucumber
1 tbs tahini
1 tsp lemon juice
1 large garlic clove
3 tbs olive oil
1/2 tsp cumin
sea salt
black pepper

Method:

1) Chop the red onion and cucumber into small chunks, separate out the red onion as much as possible.

2) Mix with the chickpeas in a salad bowl and set aside.

3) Chop the garlic clove into teeny weeny pieces, and mix in a glass with the rest of the leftover ingredients

4) Toss everything in the salad bowl, serve and enjoy!
