Simple Chocolate Flapjacks

This is a quick, simple and satisfying recipe based roughly on my recipe for goji berry flapjacks from last spring. It’s a perfect quick bake for weekday evenings, and doesn’t require anything fancy–just the basic ingredients for flapjacks, and a small amount of dark chocolate to make them ever-so-slightly more yummy. This recipe would make a good foundation for experimentation: fancy adding dried berries, or chocolate chunks, or peanuts? The possibilities are (almost) endless. It’ll make approximately 12 squares or 9 bars.

Simple Chocolate Flapjacks

You’ll need:

125g vegan margarine/butter
3 tbsp golden syrup
100g light muscovado sugar
1/2 tbsp vanilla extract
225g porridge oats
30g dark/plain chocolate

Simple Chocolate Flapjacks


1) Preheat the oven to 180C (fan).

2) Melt the chocolate either in a microwave or in a bowl over a pan of boiling water.

3) Melt the margarine and sugar in a medium-sized pan, then add the vanilla extract, golden syrup, and melted chocolate. Give the mixture a good stir.

3) Then add the porridge oats. Mix well, and empty into a baking tin lined with greaseproof paper or foil.

4) Pop into the oven for 25-30 minutes until brown on top and starting to darken around the edges. You might want to turn it around halfway through if your oven is unreliable!

5) Divide into rough squares as soon as it comes out of the oven, and then leave to cool and solidify before serving/wrapping/gobbling.
