Avocado and Kale Pesto

Kale and Avocado Pesto - Kitsunetsuki KItchen
This is a very simple edit of my lemony avocado pesto; it’s essentially the same, but with raw kale in place of the basil! It’s delicious, though, so it deserves a blog post all of its own.

 

Ingredients (makes enough for one bowl of pasta):
30-40g curly kale, de-stalked
15g pine nuts (more if you can afford it!)
1/2 tsp salt
1 garlic clove, minced
juice of half a lemon
1/2 ripe hass avocado
1 tbs olive oil
black pepper
optional/additional toppings: chia seeds, sesame seeds, cherry tomatoes

Method (it’s very simple!):
1. Toast the pine nuts in a frying pan with a splash of the olive oil, until brown.
2. Blend the toasted pine nuts with the rest of the ingredients–if you’re using the pesto for pasta, save 1/3 of the pine nuts to top. Done!
