Breakfast Tortillas (or, Shakshuka Reincarnated)

Breakfast Tortillas

This mexican-inspired breakfast is a proper hangover killer and super simple to make (and remember!). It’s a bit of mix of a recipe from the hungover cookbook plus my recipe for vegan avocado shakshuka. These amounts will make two very full tortillas with a little filling to spare, so you could split it if you’re cooking for one (or just make enough for two and eat it all yourself, like I do).

You’ll need:

splash of oil,
1 onion, chopped
1 tin chopped tomatoes
2-3 vegan sausages (I use Lindas!), chopped
1 red pepper, chopped
2-3 tortillas
1-2 avocado
1/2 tsp cumin
1 tsp paprika (you could use smoked paprika too)
1/4 tsp chilli powder (depends on the strength of your powder and how much you like spice!

Method:

1) Heat a blob of oil in a fairly deep frying pan, fry the onion until starting to soften.
2) Add the red pepper and 2 sausages, along with the spices (1/2 tsp cumin, 1 tsp paprika, 1/4 tsp chilli powder)
3) When the sausages are nicely browned, add the tin of chopped tomatoes, stir, and simmer to reduce.
4) Heat your tortillas (I like to do it in a wok), plate and fill with the spicy sausage mix.
5) Chop your avocados in half and then lengthways to top.

Optional: If you want, add vegan cheese, or jalapeños if you want serious heat!
